After making wine for various Martinborough wineries, Chris Buring established his own winemaking business in 2002 in the famous Wairarapa wine village of Martinborough.
A well-equipped winery evolved from a converted barn and a new building on Chris and Polly's 'Oak House' bed and breakfast property. As well as producing fine wines under the 'Burings of Martinborough' label, Chris makes wine under contract for a number of local Wairarapa growers.

2004 Pinot Noir
Selected clones from three Martinborough vineyards were carefully blended to produce this outstanding wine, crafted to give evolving interactions of fruit flavours, acid and tannin. Nose and palate are redolent of black cherry, mushroom and chocolate, with subtle oak influences. his wine will continue to develop satisfyingly for many years. Try this Pinot Noir with pork, lamb and venison, or with traditional Burgundian cuisine.
2009 Update: This wine is smoothing out well. Highly accepted by young and older folk almost globally.

2005 Pinot Noir
This wine is a fine tribute to the Pinot Noir grape and the winemaker’s skill. The 2005 vintage produced low yields of intensely flavoured fruit. The carefully selected Dijon clones from four Wairarapa vineyards to maximise fruit complexity. The wines were blended with care and aged for almost a year in one and two year old fine French oak. Concentrated colour, ripe berry aromas and hints of oak lead into a mouth filling experience of black cherries, a suggestion of chocolate, a touch of cassis and smooth fruit and oak tannins. This is a wine that will continue to develop for years, and will reward those with patience.

2006 Unoaked Chardonnay
Mendoza clone Chardonnay grapes from three small Martinborough vineyards were hand picked at perfect ripeness. After primary fermentation a superbly balanced wine emerged which required no further intervention a winemaker’s dream.
The pale golden wine opens in the glass with aromas of tropical fruits and ripe peaches to delight the nose. The wine fills the palate with great fruit flavours typical of Mendoza, and finishes with a refreshing hint of citrus.
Enjoy now or cellar for up to three years. Serve cool, but not overly chilled, as an aperitif or with seafood and lightly spiced dishes.
In 2009 the wine has exceeded the winemakers expectations and is drinking beautifully and gaining international acceptance. It is an anytime food wine better suited to robust chicken dishes or fuller textured seafood.
